Asparagus, mushroom, pepper, tomato reduction with a noodle medley. Be jealous.
Edit: Recipe: Handful of stalks of asparagus, 10 mushrooms, a bell pepper [I did half of green, half of red], half a tomato, two servings of leftover pasta. Chop up all vegetables, add oil and saute for about 15-20 minutes. Put pasta in pan to warm and top with cheese. Wait until evenly melted and then serve. Mine serves 2. Honestly, I just made it up as I went.

Oh, what are these you ask?
Only homemade chocolate chip cookies with a hint of cinnamon, straight from the oven so they’re still warm with melty chocolate chips, a crisp edge and a soft, fluffy centre.
It’s okay to be jealous.

Lobster Roll
I need to look further into this but in the mean time I do know I am not going to buy copious amounts of lobster this summer, I am keeping it to my regular two or three times a summer to keep it special. So with that being said, this is our second time buying lobsters this summer and I am keeping it simple and delicious with a lobster roll.
Lobster meat from 2-1½ lb steamed lobsters cut into 1”chunks
1 tbs mayonnaise
1 scallion, green and white parts sliced thin
Salt and pepper
1 tbs Butter
2 Potato Rolls
Baby Arugula
Chopped tomatoes
Place the lobster meat in a large bowl, add mayo and slice scallion, stir gently to combine. Season with salt and pepper to taste. Set aside.
Heat a cast iron skillet over medium heat, add butter, when melted place potato roll on its side and sauté until lightly brown, flip and do the same on other side.
Time to assemble
Open lobster roll and add a small handful of arugula leaves, chopped tomatoes and a few spoonfuls of the lobster salad.
Eat and enjoy.
Now time to do a little research before my next lobster purchase.
